Healthy Chocolate Chip Oatmeal Bars

Dry Ingredients:

  • 2 cups rolled oats
  • ½ teaspoon baking powder
  • ½ teaspoon cinnamon
  • ¼ teaspoon salt
  • ½ cup dark chocolate chips

Wet Ingredients:

 

  • ½ cup almond butter (or peanut butter)
  • ⅓ cup honey or maple syrup
  • 1 large egg (or flax egg for a vegan option)
  • 1 teaspoon vanilla extract
  • ¼ cup unsweetened applesauce

Instructions

Prepare the Batter:

  1. Preheat the Oven: Set the oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
  2. Mix Dry Ingredients: In a large bowl, stir together oats, baking powder, cinnamon, salt, and chocolate chips.
  3. Combine Wet Ingredients: In another bowl, whisk almond butter, honey, egg, vanilla extract, and applesauce until smooth.
  4. Mix Everything Together: Pour the wet mixture into the dry ingredients and stir until fully combined.

Bake the Bars:

  1. Transfer to Pan: Spread the batter evenly into the prepared baking pan.
  2. Bake: Place the pan in the oven and bake for 18–20 minutes or until the edges turn golden brown.

Cool and Slice:

 

  1. Let Them Cool: Allow the bars to cool in the pan for 10 minutes before transferring them to a wire rack.
  2. Slice and Serve: Cut into 12 bars and enjoy!
